2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup soy sauce

1/4 cup rice vinegar

1/4 cup honey

3 tablespoons cornstarch

4 tablespoons sesame oil

2 tablespoons minced garlic

2 tablespoons minced ginger

1 teaspoon crushed red pepper flakes (adjust to taste)

1/2 cup chicken broth

1 tablespoon hoisin sauce

1 cup broccoli florets (optional for a veggie boost)

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Cooked rice (for serving)

Instructions
 

Prepare the Chicken: Place the chicken thighs in the slow cooker.

    Mix the Sauce: In a bowl, whisk together soy sauce, rice vinegar, honey, cornstarch, sesame oil, garlic, ginger, crushed red pepper flakes, chicken broth, and hoisin sauce until smooth.

      Combine: Pour the sauce mixture over the chicken in the slow cooker. Stir to ensure the chicken is evenly coated.

        Set the Slow Cooker: Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender and cooked through.

          Add Broccoli (Optional): If using broccoli, add it during the last 30 minutes of cooking to steam and absorb the flavors.

            Thicken the Sauce: If you prefer a thicker sauce, after cooking, remove the lid and set the slow cooker to high. In a small bowl, mix 1 tablespoon cornstarch with 2 tablespoons of water, then slowly stir it into the sauce. Let it cook for an additional 10-15 minutes.

              Serve: Serve the General Tso’s chicken over cooked rice, garnished with sesame seeds and sliced green onions.
