Ingredients

2 pounds beef chuck, cut into 1-inch cubes

4 medium carrots, sliced

3 medium potatoes, diced (Yukon Gold or red)

1 large onion, chopped

3 cloves garlic, minced

1 cup beef broth (gluten-free)

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce (gluten-free)

1 cup green beans, trimmed and halved

1 cup peas (fresh or frozen)

Instructions

Prepare the Beef: Season the beef cubes generously with salt and pepper. In a skillet over medium-high heat, heat the olive oil. Add the beef in batches (avoid overcrowding) and brown on all sides. Transfer the browned beef to the slow cooker.

Sauté the Aromatics: In the same skillet, add chopped onion and garlic, sautéing until softened (about 3-4 minutes). Do not let them brown. Add this mixture to the slow cooker with the beef.

Add Vegetables and Liquid: Layer the carrots, potatoes, and green beans on top of the beef. In a bowl, mix together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour this mixture over the layered ingredients in the slow cooker.

Cooking: Cover the slow cooker and cook on low for 8 hours, or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.

Finish the Stew: In the last 30 minutes of cooking, add the peas, stir gently, and let them heat through.

Serve: Taste the stew and adjust seasoning, adding more salt and pepper if needed. Remove the bay leaves before serving. Ladle the hearty stew into bowls, and enjoy with gluten-free bread or on its own!
