Ingredients

2 pounds boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand or homemade)

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon black pepper

½ teaspoon salt

2 tablespoons apple cider vinegar

2 tablespoons brown sugar (optional, for sweetness)

Buns for serving (optional)

Coleslaw for topping (optional)

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts in the bottom of the slow cooker.

Mix the Sauce: In a medium bowl, combine the BBQ sauce, chopped onion, minced garlic, smoked paprika, ground cumin, chili powder, black pepper, salt, apple cider vinegar, and brown sugar. Stir well to combine.

Combine Ingredients: Pour the BBQ sauce mixture over the chicken breasts in the slow cooker, ensuring the chicken is well-coated.

Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and shreds easily with a fork.

Shred the Chicken: Remove the chicken from the slow cooker and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.

Return to Sauce: Return the shredded chicken to the slow cooker and stir to combine with the remaining BBQ sauce. Let it cook for an additional 15-30 minutes on low to absorb the flavors.

Serve: Serve the pulled chicken on buns with coleslaw on top, or enjoy it on its own!
