2 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1 large egg

1/2 cup milk (or dairy-free alternative)

1 teaspoon vanilla extract

1/4 cup chopped walnuts (optional)

Oil for frying (vegetable or coconut oil)

Honey or maple syrup for drizzling (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas, granulated sugar, egg, milk, and vanilla extract. Mix until well blended.

    In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

      Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped walnuts for an extra crunch.

        Heat a skillet over medium heat and add enough oil to coat the bottom. Let the oil heat for a minute.

          Using a tablespoon, drop spoonfuls of the batter onto the hot skillet, leaving space between each fritter.

            Cook for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes on the other side. Adjust the heat as necessary to avoid burning.

              Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.

                Serve warm with a drizzle of honey or maple syrup on top, if desired.
