Ingredients

2 cups rolled oats

1 cup nuts (almonds, walnuts, or pecans), coarsely chopped

½ cup honey or maple syrup

½ cup creamy peanut butter

1 tsp vanilla extract

¼ tsp salt

1 tsp cinnamon (optional)

½ cup chocolate chips (optional)

½ cup dried fruits (raisins, cranberries, or apricots), optional

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, salt, and cinnamon (if using). Stir well to mix.

Heat Wet Ingredients: In a small saucepan over low heat, melt together the honey (or maple syrup) and peanut butter, stirring until smooth. Remove from heat and add in the vanilla extract.

Combine Ingredients: Pour the warm peanut butter mixture over the dry ingredients. Stir until everything is well coated.

Spread on Baking Sheet: Pour the mixture onto the prepared baking sheet, spreading it out evenly. Press it down firmly with a spatula for extra crunchiness.

Bake: Bake in the preheated oven for about 20-25 minutes, or until golden brown, stirring halfway through to ensure even baking.

Cool and Add Extra Ingredients: Remove from the oven and let it cool completely. Once cooled, add chocolate chips and dried fruits if desired, mixing gently.

Store: Store in an airtight container at room temperature for up to two weeks.
