4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 ½ cups warm water (about 110°F/43°C)

2 tbsp granulated sugar

1 tsp salt

2 tbsp olive oil

½ cup molasses

1 cup sesame seeds

Optional: 1 tbsp nigella seeds for extra flavor

Activate Yeast: In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dough: In a large mixing bowl, combine the flour and salt. Create a well in the center, then add the olive oil and the activated yeast mixture. Mix until combined.

      Knead: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until it’s smooth and elastic.

        First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

          Shape the Simit: Once risen, punch down the dough and divide it into 10 equal portions. Roll each piece into a long rope (about 10-12 inches) and form a circle, twisting the ends together to seal.

            Prepare the Bath: In a shallow bowl, mix molasses with about 1 cup of warm water. Dip each bagel into this mixture before coating with sesame seeds.

              Coat with Seeds: After dipping, immediately roll the bagel in sesame seeds until fully coated. Optional: sprinkle some nigella seeds for added flavor.

                Second Rise: Place the formed bagels on a baking sheet lined with parchment paper. Cover and let them rise for an additional 30 minutes.

                  Preheat Oven: Preheat your oven to 425°F (220°C).

                    Bake: Bake the simit in the preheated oven for 20-25 minutes, or until golden brown and crisp on the outside.
