Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients
  

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cooked quinoa or brown rice

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

For the Mango Salsa:

1 ripe mango, diced

1 jalapeño, minced (seeds removed for less heat)

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup sour cream or Greek yogurt

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon honey or agave syrup

Salt and pepper to taste

Instructions
 

Prepare the Mango Salsa:

    - In a medium bowl, combine diced mango, minced jalapeño, chopped red onion, cilantro, lime juice, and salt. Mix gently and set aside to allow flavors to meld.

      Make the Lime-Chili Sauce:

        - In a small bowl, whisk together sour cream (or Greek yogurt), lime juice, chili powder, honey (or agave), salt, and pepper until smooth. Adjust seasoning to taste; set aside.

          Cook the Shrimp:
