Shirred Eggs (Baked Eggs with Spinach & Mushrooms)

Ingredients
  

4 large eggs

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (preferably cremini)

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup heavy cream

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

Salt and black pepper to taste

Fresh herbs for garnish (such as chives or parsley)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes). Add the garlic, stirring for another minute.

      Cook Mushrooms and Spinach: Add the sliced mushrooms to the skillet and cook until they are soft (about 4-5 minutes). Then, add the chopped spinach and cook until wilted (around 2-3 minutes). Season this mixture with salt and black pepper to taste.

        Prepare Baking Dishes: Lightly grease individual ramekins or a small baking dish with a touch of olive oil. Evenly distribute the mushroom and spinach mixture into the bottom of each ramekin/dish.

          Add Eggs and Cream: Crack an egg carefully into each ramekin over the vegetable mixture. Drizzle the heavy cream over the eggs, and sprinkle grated Parmesan cheese evenly on top.

            Bake the Eggs: Place the ramekins or dish in the preheated oven. Bake for 15-20 minutes, or until the egg whites are set but the yolks are still runny (or cook to your desired doneness).

              Garnish and Serve: Remove the dish from the oven and let it cool for a minute. Garnish with freshly chopped herbs, and serve warm with some crusty bread for dipping.
