Sheet Pan Mini Meatloaf and Roasted Potatoes

For the Mini Meatloaves:

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

1/4 cup diced bell pepper (any color)

2 cloves garlic, minced

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup ketchup (for topping)

For the Roasted Potatoes:

1 lb baby potatoes, halved (Yukon Gold or red potatoes work well)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.

    Prepare the Potatoes: In a bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread the seasoned potatoes on one half of the prepared baking sheet.

      Make the Meatloaf Mixture: In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, onion, bell pepper, garlic, egg, Worcestershire sauce, Italian herbs, salt, and pepper. Mix until all ingredients are thoroughly combined.

        Form the Mini Meatloaves: Using your hands, shape the meat mixture into small loaves, about 2 inches in length, and place them on the other half of the baking sheet.

          Add the Ketchup: Spoon a little ketchup on top of each mini meatloaf for a sweet and tangy glaze.
