For the Mini Meatloaf:

1 pound ground beef or turkey

1 cup breadcrumbs (preferably whole wheat)

1/2 cup finely chopped onion

1/2 cup grated carrot

2 cloves garlic, minced

1/4 cup milk

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup ketchup (plus more for topping)

For the Roasted Potatoes:

1 pound baby potatoes, halved (or quartered if large)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef or turkey, breadcrumbs, chopped onion, grated carrot, minced garlic, milk, egg, Worcestershire sauce, Italian herbs, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

      Form Meatloaf: Divide the meat mixture into small portions and shape them into mini loaves (about 2-3 inches long). Place the mini meatloaves on one side of a large baking sheet lined with parchment paper or lightly greased.

        Prepare the Potatoes: In a separate bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper until they are well coated.

          Arrange the Potatoes: Place the seasoned potatoes on the other side of the baking sheet next to the mini meatloaves.
