Şekerpare (Romoosh el Set)

Ingredients
  

1 cup unsalted butter, softened

1 cup powdered sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 cup semolina

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup finely chopped almonds or walnuts for garnish

For the Syrup:

2 cups water

2 cups granulated sugar

1 tablespoon lemon juice

A few drops of rose water (optional)

Instructions
 

Prepare the Syrup: In a medium saucepan, combine water and granulated sugar. Bring to a boil over medium heat, stirring until the sugar dissolves. Add lemon juice and reduce the heat, allowing it to simmer for 10 minutes. Remove from heat, add rose water if desired, and let it cool completely.

    Make the Dough: In a mixing bowl, cream the softened butter and powdered sugar until light and fluffy. Beat in the egg and vanilla extract until combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, semolina, baking powder, baking soda, and salt.

        Combine Mixture: Gradually add the dry mixture to the butter mixture, stirring until a soft dough forms. If the dough feels too sticky, let it rest for about 30 minutes.

          Shape the Cookies: Preheat your oven to 350°F (175°C). Grease a baking sheet. With your hands, form small oval-shaped balls (about the size of a golf ball) from the dough and place them on the prepared baking sheet, leaving space in between each.

            Decorate: Flatten each cookie slightly with your fingers and press a piece of chopped almond or walnut into the center.

              Bake: Bake in the preheated oven for about 20-25 minutes, or until the tops are lightly golden.

                Soak in Syrup: Once baked, immediately pour the cooled syrup over the hot Şekerpare. Allow them to absorb the syrup for at least 1 hour before serving.

                  Serve and Enjoy: Serve at room temperature garnished with additional nuts if desired. Enjoy your delicious Şekerpare with coffee or tea!
