Seafood Stuffed Shells

20 large pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup cooked seafood mix (shrimp, crab, and scallops)

1/2 cup grated Parmesan cheese

1/2 cup fresh spinach, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon lemon zest

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Shells: Boil a large pot of salted water. Add the pasta shells and cook until al dente, according to package instructions. Drain and set aside to cool slightly.

    Prepare the Filling: In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the chopped spinach and cook until wilted. In a large bowl, combine ricotta, mozzarella, seafood mix, sautéed spinach, lemon zest, Italian seasoning, salt, and pepper. Mix well.

      Stuff the Shells: Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce evenly in the bottom of a 9x13 inch baking dish. Using a spoon, carefully fill each pasta shell with the seafood mixture and place them in the baking dish, seam side up.

        Top and Bake: Pour the remaining marinara sauce over the stuffed shells, then sprinkle with grated Parmesan cheese. Cover the dish with aluminum foil.

          Bake: Place in the preheated oven and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

            Serve: Remove from the oven, let cool for a few minutes, and garnish with fresh parsley. Serve warm and enjoy!
