4 large eggs

1 cup fresh spinach, chopped

1 ripe avocado, diced

1 small onion, finely chopped

1 tablespoon olive oil or butter

Salt and pepper, to taste

Optional: 1 tablespoon feta cheese, crumbled

Optional: Red pepper flakes, for a kick

In a medium bowl, crack the eggs and whisk them until fully blended. Season with salt and pepper.

    In a non-stick skillet, heat the olive oil or butter over medium heat. Add the finely chopped onion and sauté for about 2-3 minutes, or until translucent.

      Once the onion is soft, add the chopped spinach to the skillet and cook until it wilts, around 1-2 minutes.

        Pour the whisked eggs into the skillet and gently stir with a spatula, cooking until the eggs are just set but still creamy. This should take about 3-4 minutes.

          Remove from heat and gently fold in the diced avocado and (if using) crumbled feta cheese. Taste and adjust seasoning if necessary.
