Ingredients
  

4 large eggs

2 tablespoons heavy cream

1 tablespoon truffle oil

1 teaspoon fresh chives, finely chopped

Salt and pepper, to taste

1 tablespoon unsalted butter

Optional: shaved truffles (for garnish)

Instructions
 

In a medium bowl, crack the eggs and add the heavy cream. Season with salt and pepper. Whisk together vigorously until well combined and frothy.

    Heat a non-stick skillet over medium-low heat and add the butter. Allow it to melt and become slightly bubbly but not browned.

      Pour the egg mixture into the skillet. Let it sit for a few seconds to begin setting at the edges.

        Gently stir the eggs with a spatula, folding them softly from the edges to the center, allowing uncooked eggs to flow to the edges. Continue this process until the eggs are mostly set but still slightly runny.

          Remove the skillet from the heat and drizzle the truffle oil over the eggs. Continue to gently fold in the chives. The residual heat will finish cooking the eggs perfectly.

            Plate the scrambled eggs and, if desired, garnish with shaved truffles. Serve immediately.
