Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup grated sharp cheddar cheese

½ cup grated parmesan cheese

1 cup buttermilk

1 large egg

¼ cup olive oil or melted butter

½ cup finely chopped chives (or green onions)

½ teaspoon garlic powder

½ teaspoon black pepper

Instructions

Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it lightly.

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, garlic powder, and black pepper. Whisk together until well mixed.

In another bowl, whisk together the buttermilk, egg, and olive oil (or melted butter) until smooth and combined.

Pour the wet ingredients into the dry ingredients and fold gently until just combined. Be careful not to overmix.

Gently fold in the grated sharp cheddar cheese, grated parmesan cheese, and chopped chives until evenly distributed.

Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

Bake in the preheated oven for 18-20 minutes or until the muffins have risen, are golden brown on top, and a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the tin for a few minutes before transferring the muffins to a wire rack to cool completely.
