2 cups cooked jasmine rice (preferably day-old)

1 lb boneless, skinless chicken thighs, diced

¼ cup teriyaki sauce

2 tablespoons soy sauce

1 tablespoon mirin (Japanese rice wine)

1 tablespoon sesame oil

1 tablespoon vegetable oil

3 cloves garlic, minced

1-inch piece of ginger, grated

1 cup mixed vegetables (peas, carrots, corn)

2 green onions, chopped

2 large eggs, lightly beaten

Sesame seeds for garnish

Nori sheets, cut into strips, for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken thighs with teriyaki sauce, soy sauce, and mirin. Let it marinate for at least 30 minutes to infuse flavors.

    Prepare the Rice: If using fresh rice, allow it to cool down and spread it on a baking sheet to dry out slightly. This will prevent the rice from becoming mushy.

      Cook the Chicken: Heat vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until it’s fully cooked and nicely caramelized. Remove from the pan and set aside.

        Sauté Aromatics: In the same wok, add sesame oil. Stir in minced garlic and grated ginger, cooking for about 1 minute until fragrant.

          Add the Veggies: Toss in the mixed vegetables and stir-fry for another 2-3 minutes until they are vibrant and slightly tender.

            Combine Rice: Add the cooked jasmine rice to the wok, breaking up any clumps. Stir well to mix all ingredients together and heat through.

              Add the Chicken Back: Return the cooked chicken to the wok, mixing to combine evenly with the rice and vegetables.

                Scramble the Eggs: Push the rice mixture to one side of the wok, add a touch more oil if needed, then pour in the beaten eggs. Allow to sit for a few seconds before scrambling and combining into the rice.

                  Season and Finish: Drizzle extra soy sauce if desired, and mix in chopped green onions. Cook for an additional minute to heat through.

                    Serve: Plate the fried rice and garnish with sesame seeds and nori strips if using. Enjoy your flavorful and extravagant meal!
