Sausage Tortellini Soup

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

4 cups chicken or vegetable broth

1 (14-ounce) can diced tomatoes (with juice)

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

10 ounces fresh cheese tortellini

2 cups fresh spinach (or kale)

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes). Remove excess grease if necessary.

    Add the diced onions, minced garlic, carrots, and celery to the pot. Sauté for about 5-7 minutes, or until the vegetables are tender and the onions are translucent.

      Pour in the chicken or vegetable broth and add the diced tomatoes, along with their juices. Stir in the dried basil, oregano, and red pepper flakes (if using). Bring the mixture to a boil, then reduce the heat and let it simmer for about 10-15 minutes to allow the flavors to blend.

        Add the tortellini to the soup and cook according to package directions, usually about 3-5 minutes, until they are tender and floating.

          Stir in the fresh spinach (or kale) and cook until wilted, about 2 minutes. Season the soup with salt and pepper to taste.

            Serve the soup hot, topped with grated Parmesan cheese and a sprinkle of fresh parsley for garnish. Enjoy!
