1 package of puff pastry sheets (2 sheets, thawed)

1 cup cooked sausage (Italian or breakfast, crumbled)

1 cup fresh or canned cranberry sauce

8 oz Brie cheese (cut into small cubes)

1 egg (beaten, for egg wash)

Fresh thyme or parsley (for garnish, optional)

Salt and pepper (to taste)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Puff Pastry: Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 2-inch squares.

      Assemble the Bites: Place a puff pastry square on the baking sheet. On each square, add about 1 tablespoon of crumbled sausage, followed by 1 teaspoon of cranberry sauce. Finally, top with a small cube of Brie cheese.

        Seal the Bites: Take another puff pastry square and place it over the filling. Pinch the edges together to seal or use a fork to crimp the edges for a decorative look.

          Egg Wash: Brush the tops of the assembled bites with the beaten egg to give them a golden finish.
