1 cup sushi rice

1 1/4 cups water

1 tablespoon rice vinegar

1 tablespoon sugar

1 teaspoon salt

8 ounces fresh salmon, skinless and boneless

1 tablespoon soy sauce

1 tablespoon sesame oil

1 avocado, sliced

2 green onions, thinly sliced

1 tablespoon black sesame seeds

Wasabi and pickled ginger (for serving)

Cook the Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water, then bring to a boil. Reduce heat to low, cover, and simmer for about 18 minutes or until the water is absorbed. Remove from heat and let it sit for 10 minutes.

    Season the Rice: In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Fluff the cooked rice with a fork and gently fold in the vinegar mixture. Let the rice cool to room temperature.

      Prepare the Salmon: While the rice is cooling, heat a non-stick skillet over medium-high heat. Drizzle sesame oil into the skillet. Season the salmon fillets with soy sauce and sear in the skillet for about 3-4 minutes on each side until cooked and slightly crispy. Remove from heat and let rest for a couple of minutes before cutting into cubes.
