2 cups sushi rice

2 ½ cups water

¼ cup rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 pound fresh salmon fillet

1 tablespoon soy sauce

1 tablespoon sesame oil

2 tablespoons olive oil

1 avocado, sliced

2 green onions, finely chopped

1 tablespoon pickled ginger (optional)

1 tablespoon wasabi (optional)

Sesame seeds for garnish

Nori sheets, cut into thin strips (optional)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 20 minutes until water is absorbed. Remove from heat and let it sit, covered, for another 10 minutes.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold it in to season the rice. Let it cool to room temperature.

      Prepare the Salmon: While the rice is cooling, cut the salmon into small cubes. In a bowl, toss the salmon with soy sauce and sesame oil, allowing it to marinate for about 10 minutes.

        Crisp the Rice: Heat olive oil in a large non-stick skillet over medium heat. Form patties or small squares with the cooled sushi rice and place them in the skillet. Cook for about 3-4 minutes on each side until they are golden brown and crispy. Remove from the skillet and set aside.

          Assemble the Dish: On each crispy rice patty, place a piece of marinated salmon. Top with avocado slices, chopped green onions, and sesame seeds. If desired, add a touch of pickled ginger and wasabi for an extra kick.

            Serve: Arrange the crispy rice delights on a serving platter. Optionally, garnish with strips of nori for added flavor and texture. Enjoy immediately while the rice is crispy!
