Ingredients

2 large boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

Vegetable oil, for frying

2 brioche burger buns

1 cup coleslaw (store-bought or homemade)

4 slices of cheddar cheese

2 tablespoons barbecue sauce

2 tablespoons pickles (optional)

Instructions

Marinate the Chicken: Begin by placing the chicken breasts in a bowl and pouring the buttermilk over them. Allow them to marinate in the refrigerator for at least 1 hour, or preferably overnight for maximum tenderness.

Prepare the Coating: In a large mixing bowl, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.

      Fry the Chicken:

        - Heat 1/2 inch of vegetable oil in a large skillet or deep fryer over medium-high heat (about 350°F or 175°C).

          - Take the marinated chicken out of the buttermilk, allowing the excess liquid to drip off. Dredge each piece in the flour mixture, pressing lightly to ensure an even coating.

            - Working in batches, carefully add the chicken to the hot oil and fry for about 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove and drain on paper towels.

              Assemble the Sandwich:

                - Toast the brioche buns lightly in a pan or on a griddle until golden brown.

                  - Start with the bottom bun, add a piece of crispy chicken, a slice of cheddar cheese, a generous spoonful of coleslaw, and a drizzle of barbecue sauce. Add pickles if desired.

                    - Top the sandwich with the other half of the toasted brioche bun.

Serve: Cut the sandwich in half if desired, serve with extra coleslaw on the side, and enjoy your delicious Rodeo Crispy Chicken Sandwich!
