Ingredients
  

2 medium zucchinis, sliced into half-moons

1 cup fresh corn kernels (about 2 ears of corn)

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon smoked paprika

1 teaspoon fresh lemon juice

Salt and pepper to taste

¼ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the sliced zucchinis and corn kernels. Drizzle with olive oil, then sprinkle in the garlic powder, smoked paprika, salt, and pepper. Toss well to coat all the vegetables evenly.

      Spread the zucchini and corn mixture in a single layer on a large baking sheet lined with parchment paper.

        Roast in the preheated oven for 15-20 minutes, stirring halfway through, until the zucchini is tender and lightly caramelized, and the corn is golden.

          Remove the baking sheet from the oven and drizzle with fresh lemon juice. Sprinkle the grated Parmesan cheese over the top while the vegetables are still hot, allowing it to melt slightly.
