1 whole chicken (about 4-5 lbs)

4 cloves garlic, minced

2 lemons, one sliced and one juiced

3 tablespoons olive oil

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

1 onion, quartered

4-5 carrots, cut into large chunks

3-4 small potatoes, halved

1 cup chicken broth or white wine

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a bowl, combine the minced garlic, lemon juice, olive oil, rosemary, thyme, parsley, salt, and pepper. Mix well to create a flavorful marinade.

      Season the Chicken: Pat the chicken dry with paper towels. Rub the marinade all over the chicken, including under the skin for maximum flavor. Place lemon slices inside the cavity of the chicken.

        Arrange Vegetables: In a large roasting pan, spread the quartered onion, carrots, and potatoes. Drizzle with olive oil and season with salt and pepper. Place the marinated chicken on top of the vegetables.

          Add Liquid: Pour the chicken broth or white wine into the bottom of the roasting pan. This will keep the chicken moist and create a delicious base for gravy.

            Roast the Chicken: Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear. Baste the chicken with pan juices halfway through cooking for extra flavor.

              Finish and Rest: Once done, remove the chicken from the oven and let it rest for about 10-15 minutes before carving. This allows the juices to redistribute, resulting in a juicier chicken.
