Ingredients
  

1 cup ricotta cheese

3 large eggs

1/4 cup milk (whole or buttermilk)

Zest of 1 lemon or orange

2 tablespoons sugar

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

Butter or oil for cooking

Maple syrup or honey, for serving

Fresh berries, for topping (optional)

Instructions
 

In a large mixing bowl, whisk together the ricotta cheese, eggs, milk, citrus zest, sugar, and vanilla extract until smooth.

    In a separate bowl, mix the flour, baking powder, and salt together.

      Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to over-mix; a few lumps are okay.

        Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.

          Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes or until golden brown.

            Repeat with the remaining batter, adding more butter or oil to the skillet as necessary.

              Serve warm with maple syrup or honey, and top with fresh berries if desired.
