Ingredients

1 baguette, sliced into 1/2 inch rounds

1 cup ricotta cheese

1 tablespoon honey

1 tablespoon lemon juice

Salt and pepper, to taste

8 fresh figs, sliced (or dried figs if out of season)

4 ounces prosciutto, thinly sliced

Fresh thyme leaves, for garnish

Olive oil, for drizzling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baguette Slices: Lay the sliced baguette rounds on a baking sheet. Brush both sides lightly with olive oil and season with a pinch of salt.

Toast the Bread: Bake in the preheated oven for about 8-10 minutes, or until the slices are golden brown and crispy.

Mix the Ricotta: In a bowl, combine the ricotta cheese, honey, lemon juice, salt, and pepper. Mix well until creamy and smooth.

Assemble the Crostini: Once the baguette slices are toasted and slightly cooled, spread a generous layer of the ricotta mixture onto each slice.

Add the Figs and Prosciutto: Top the ricotta with a slice of fresh fig and a piece of prosciutto.

Garnish and Serve: Drizzle a tiny bit of honey over the top and add fresh thyme leaves as a garnish. Serve immediately to enjoy the best texture and flavor.
