4 cups whole milk

1 cup heavy cream

1/4 teaspoon sea salt

3 tablespoons white vinegar or fresh lemon juice

In a large saucepan, combine the whole milk, heavy cream, and sea salt. Heat the mixture over medium heat, stirring gently until it reaches a gentle simmer (approximately 190°F or 88°C). Do not let it boil.

    Once the mixture is hot, remove it from the heat and stir in the white vinegar or lemon juice. You'll see the curds beginning to separate from the whey. Let it sit for about 5-10 minutes to allow the curds to form fully.

      Line a fine-mesh strainer with cheesecloth or a clean kitchen towel and place it over a bowl. Carefully ladle the curdled mixture into the strainer. Allow it to drain for about 10-15 minutes if you prefer a creamier ricotta, or longer for a firmer texture.
