1 package of frozen puff pastry (2 sheets), thawed

1 cup ricotta cheese

1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)

1/2 cup grated Parmesan cheese

1 egg, beaten (for egg wash)

1 clove garlic, minced

1/4 teaspoon nutmeg

Salt and pepper to taste

Optional: 1/4 cup feta cheese, crumbled

Sesame seeds or poppy seeds for topping

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped spinach, grated Parmesan cheese, minced garlic, nutmeg, salt, and pepper. If using, add crumbled feta cheese for an extra burst of flavor. Mix until well combined.

      Roll Out the Pastry: On a lightly floured surface, roll out each sheet of puff pastry to about 1/8-inch thickness. Cut each sheet into squares (about 3x3 inches).

        Fill the Pastry: Place a spoonful (about 1 tablespoon) of the ricotta and spinach mixture in the center of each puff pastry square.

          Seal the Bites: Fold the pastry over to form a triangle or a rectangle, and press the edges firmly to seal. You can use a fork to crimp the edges for a decorative finish.

            Egg Wash: Brush the tops of the pastry bites with the beaten egg to give them a golden finish when baked. Optionally, sprinkle sesame or poppy seeds on top for added texture.

              Bake: Bake in the preheated oven for 15-20 minutes, or until the pastries are puffed and golden brown.
