Reuben Sandwich with Leftover Corned Beef

4 slices of rye bread

1 cup leftover corned beef, shredded

1/2 cup sauerkraut, drained well

1/2 cup Swiss cheese, shredded

1/4 cup Russian or Thousand Island dressing

2 tablespoons butter, softened

Fresh dill or parsley for garnish (optional)

Instructions
 

Prep the Bread: Spread a thin layer of butter on one side of each slice of rye bread.

    Assemble the Sandwich: On the unbuttered side of two slices, spread 2 tablespoons of the dressing. Layer the shredded corned beef evenly over the dressing, followed by the sauerkraut and Swiss cheese.

      Top It Off: Spread an additional tablespoon of dressing on the unbuttered side of the remaining two slices of bread, then place these on top of the sandwiches, dressing side down.

        Grill the Sandwiches: In a skillet over medium heat, place the assembled sandwiches buttered-side down. Cook for about 3-4 minutes until the bread is golden brown and crispy.

          Flip and Grill: Carefully flip the sandwiches using a spatula, and cook for another 3-4 minutes until the other side is also golden brown and the cheese has melted.

            Slice and Serve: Remove from the skillet and let rest for a minute. Slice the sandwiches in half and garnish with fresh dill or parsley if desired. Serve immediately with pickles on the side.
