2 large cucumbers, peeled and chopped

1 cup fresh lemon juice (about 4-6 lemons)

1/2 cup granulated sugar (adjust to taste)

4 cups cold water

Fresh mint leaves (for garnish)

Lemon slices (for garnish)

Instructions
 

In a blender, combine the chopped cucumbers and 1 cup of cold water. Blend until smooth.

    Strain the cucumber puree through a fine mesh sieve into a large pitcher, pressing down to extract maximum juice. Discard the pulp.

      Add the fresh lemon juice and granulated sugar to the cucumber juice in the pitcher. Stir well to combine until the sugar is fully dissolved.

        Pour in the remaining 3 cups of cold water and mix thoroughly. Taste and adjust sweetness if necessary by adding more sugar or lemon juice.

          Chill in the refrigerator for at least 30 minutes to let the flavors meld.

            Serve in glasses filled with ice cubes, garnished with fresh mint leaves and lemon slices. Enjoy this refreshing drink!
