1 cup creamy peanut butter

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips

12 mini Reese's Peanut Butter Cups, unwrapped

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large bowl, combine the creamy peanut butter, softened unsalted butter, brown sugar, and granulated sugar. Beat the mixture using an electric mixer until it becomes light and fluffy, about 2-3 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated.

        Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.

          Mix Together: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the chocolate chips until evenly distributed.

            Form Cookies: Using a spoon or cookie scoop, take one tablespoon of cookie dough and flatten it in your palm. Place a mini Reese's Peanut Butter Cup in the center and cover it with another tablespoon of dough, forming a ball around the Reese's. Make sure the chocolate is fully enclosed.
