200g plain flour

125g unsalted butter, softened

150g granulated sugar

2 large eggs

100ml milk

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp salt

200g fresh raspberries (for filling)

200g desiccated coconut (for rolling)

300g powdered sugar (for icing)

80ml boiling water

50g cocoa powder

Instructions
 

Preheat your oven to 180°C (350°F). Grease and line a square baking pan (20cm/8in) with parchment paper.

    In a large bowl, cream the softened butter and granulated sugar until light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

        In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this to the butter mixture, alternating with the milk. Mix until just combined.

          Gently fold in the raspberries, ensuring they are evenly distributed in the batter without crushing them.

            Pour the mixture into the prepared baking pan and smooth the top. Bake for 25-30 minutes or until a skewer inserted into the center comes out clean.

              Once cooled, carefully remove the cake from the pan and cut it into squares.

                To make the icing, whisk the boiling water, cocoa powder, and powdered sugar together in a bowl until smooth and slightly thickened.

                  Dip each cake square into the chocolate icing, allowing excess to drip off, and then roll it in desiccated coconut to coat.

                    Place the finished lamingtons on a wire rack to set for a few minutes before serving.
