Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

1/2 cup fresh raspberries, mashed

1 cup powdered sugar (for rolling)

Instructions

Prep the Oven and Pans: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

Beat Butter and Sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and light.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and the mashed raspberries until well combined.

Combine Dry and Wet Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough will be soft and slightly sticky.

Chill the Dough: Cover the dough with plastic wrap and refrigerate for about 30 minutes to make it easier to handle.

Form the Cookies: After chilling, use a cookie scoop or your hands to form small balls (about 1 inch in diameter). Roll each ball into the powdered sugar until fully coated.

Place on Baking Sheets: Arrange the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes, until crinkled and slightly set in the center. They will continue to cook as they cool.

Cool and Enjoy: Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
