½ cup all-purpose flour

¼ cup unsweetened cocoa powder

1 teaspoon baking powder

2 tablespoons granulated sugar

1 tablespoon lemon juice

½ cup heavy cream

4 ounces dark chocolate, chopped

1 tablespoon unsalted butter

For Garnish:

Extra raspberries

Powdered sugar for dusting

Fresh mint leaves

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 15x10 inch baking pan with parchment paper, letting it hang over the edges for easy removal.

    Make the Chocolate Cake: In a large mixing bowl, whisk together the eggs, sugar, and vanilla extract until the mixture is light and fluffy (about 5 minutes). Sift together the flour, cocoa powder, baking powder, and salt. Gently fold this dry mixture into the egg mixture until just combined.

      Bake the Cake: Pour the chocolate cake batter into the prepared baking pan, spreading it evenly. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

        Prepare the Raspberry Filling: While the cake is baking, combine the raspberries, sugar, and lemon juice in a medium bowl. Mash lightly with a fork to release the juices, then set aside to macerate.

          Roll the Cake: Once baked, remove the cake from the oven and immediately invert it onto a clean kitchen towel dusted with powdered sugar. Carefully peel away the parchment paper. Starting from one short end, tightly roll the cake up in the towel—this helps it keep its shape. Allow it to cool completely in the towel.

            Make the Chocolate Ganache: While the cake is cooling, heat the heavy cream in a small saucepan just until it begins to simmer. Remove from heat and add the chopped dark chocolate and butter. Stir until smooth and glossy. Allow it to cool slightly.

              Assemble the Swiss Roll: Once the cake is completely cooled, unroll it gently. Spread the raspberry filling evenly across the surface of the cake, leaving a small border around the edges. Roll it back up carefully.

                Coat with Ganache: Place the rolled cake seam-side down on a serving platter. Pour the chocolate ganache over the top, letting it drip down the sides.

                  Serve: Chill the swiss roll in the refrigerator for at least 30 minutes to allow the ganache to set. Before serving, dust with powdered sugar, garnish with extra raspberries and fresh mint leaves.
