Ingredients

1 cup cream cheese, softened

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 tablespoon cornstarch

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh raspberries (or frozen, thawed)

1/2 cup white chocolate chips

1/4 cup graham cracker crumbs (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream the Butter and Cheese: In a large mixing bowl, combine the softened cream cheese and butter. Beat them together with an electric mixer on medium speed until smooth and creamy.

Add Sugars & Egg: Gradually add in the granulated sugar and brown sugar, mixing until fluffy. Then, add the egg and vanilla extract, beating until well incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt until evenly mixed.

Mix Wet and Dry: Gradually add the dry mixture to the wet ingredients, blending on low speed until just combined.

Fold in Raspberries and Chocolate: Gently fold in the fresh raspberries and white chocolate chips, being careful not to break the raspberries too much.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Garnish: Sprinkle a little graham cracker crumbs on top of each cookie for that cheesecake crust flavor.

Bake: Place in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will set as they cool.

Cool Down: Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy your delightful Raspberry Cheesecake Cookies!
