2 medium zucchini, thinly sliced

1 cup buttermilk

1 cup seasoned breadcrumbs

1/2 cup grated Parmesan cheese

1 tablespoon ranch seasoning mix

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil for baking

Preheat the Oven: Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper.

    Prepare Zucchini: Wash and slice the zucchini into thin rounds (about 1/8 inch thick). Try to keep the slices uniform for even cooking.

      Soak in Buttermilk: Place the sliced zucchini in a bowl and pour the buttermilk over them. Let them soak for at least 30 minutes. This helps the breading stick better and adds flavor.

        Make the Breading Mixture: In a separate bowl, combine the seasoned breadcrumbs, grated Parmesan cheese, ranch seasoning, garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine all ingredients evenly.

          Coat the Zucchini: Remove zucchini slices from the buttermilk, allowing excess liquid to drip off. Dredge each slice in the breadcrumb mixture, pressing gently to adhere the coating. Place the breaded zucchini on the prepared baking sheet in a single layer, ensuring they do not overlap.
