Ingredients
  

1 cup quinoa, rinsed

2 cups almond milk (or any milk of choice)

2 tablespoons maple syrup (adjust to taste)

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon vanilla extract

2 medium apples, peeled, cored, and diced

1 tablespoon coconut oil (or butter)

Pinch of salt

Chopped walnuts or pecans for topping (optional)

Fresh berries for garnish (optional)

Instructions
 

In a medium saucepan, combine the rinsed quinoa and almond milk. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes, or until the quinoa is fluffy and the liquid has been absorbed. Stir halfway through to prevent sticking.

      While the quinoa cooks, heat the coconut oil in a skillet over medium heat. Add the diced apples, a pinch of salt, and sauté for about 5-7 minutes until they are soft and caramelized.

        Stir in the maple syrup, cinnamon, and nutmeg into the sautéed apples and cook for an additional 2 minutes. This will enhance the flavors and create a glaze.

          Once the quinoa is cooked, fluff it with a fork and stir in the vanilla extract. Divide the quinoa into bowls.

            Top each bowl of quinoa with the sautéed apples. Sprinkle with chopped walnuts or pecans if desired, and add fresh berries for an extra freshness.
