1 cup dried apricots, chopped

1 cup walnuts, roughly chopped

1 cup mixed dried fruits (raisins, cranberries, or sultanas)

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar

2 large eggs

½ cup honey or maple syrup

1 teaspoon vanilla extract

½ cup orange juice

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper for easy removal.

    In a medium bowl, combine the chopped dried apricots, walnuts, and mixed dried fruits. Set aside to prepare the fruit mixture.

      In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

        In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.

          Add the eggs, one at a time, mixing well after each addition. Then, stir in the honey or maple syrup, vanilla extract, and orange juice until well combined.

            Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

              Gently fold in the fruit and nut mixture until evenly distributed in the batter.

                Pour the batter into the prepared cake pan and smooth the top with a spatula.

                  Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                    Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
