1.5 pounds pork tenderloin

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon pumpkin pie spice

2 cloves garlic, minced

½ cup apple cider

¼ cup maple syrup

1 tablespoon Dijon mustard

2 tablespoons apple cider vinegar

Fresh rosemary sprigs for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, combine the pumpkin pie spice, salt, and black pepper. Rub this spice mixture all over the pork tenderloin, ensuring it is evenly coated.

      In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear it on all sides until browned, about 3-4 minutes per side.

        Remove the pork from the skillet and set aside. In the same skillet, reduce the heat to medium and add minced garlic, sautéing for about 30 seconds until fragrant.

          Pour in the apple cider, maple syrup, Dijon mustard, and apple cider vinegar. Stir well to combine everything, scraping up any brown bits from the bottom of the skillet.

            Return the seared pork tenderloin to the skillet, spooning some of the sauce over it.

              Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

                Once cooked, remove the skillet from the oven and let the pork rest for 5-10 minutes before slicing.

                  Serve the sliced pork tenderloin drizzled with the apple cider sauce, and garnish with fresh rosemary sprigs.
