1 cup rolled oats

2 cups almond milk (or any milk of choice)

1/2 cup pumpkin puree (canned or fresh)

1 teaspoon pumpkin pie spice

1/4 teaspoon ground cinnamon

2 tablespoons maple syrup (or honey)

1/4 teaspoon salt

1/2 teaspoon vanilla extract

Toppings: chopped pecans, sliced bananas, a dollop of Greek yogurt, and additional maple syrup (optional)

Instructions
 

In a medium-sized saucepan, combine the rolled oats, almond milk, pumpkin puree, pumpkin pie spice, ground cinnamon, maple syrup, salt, and vanilla extract.

    Bring the mixture to a gentle boil over medium heat, stirring occasionally. Once it's boiling, reduce the heat to low and let it simmer for about 5-7 minutes, stirring frequently until the oats are tender and have absorbed most of the liquid.

      Remove the saucepan from the heat and let it sit for a minute to thicken. If the oatmeal is too thick for your liking, you can stir in a splash more of almond milk.

        Spoon the oatmeal into bowls and top with your choice of chopped pecans, sliced bananas, a dollop of Greek yogurt, and an extra drizzle of maple syrup.
