Ingredients
  

2 ½ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

2 tsp pumpkin pie spice

½ cup unsalted butter, softened

1 cup brown sugar, packed

1 large egg

1 tsp vanilla extract

1 cup pure pumpkin puree

1 ½ cups powdered sugar (for icing)

2-3 tbsp milk (for icing)

A pinch of cinnamon (for icing)

Instructions
 

Preheat your oven: Set the oven to 350°F (175°C).

    Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice until well combined. Set aside.

      Cream butter and sugar: In another bowl, use an electric mixer to beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.

        Add egg and pumpkin: Beat in the egg and vanilla extract to the butter mixture until thoroughly combined. Then, mix in the pumpkin puree until smooth.

          Combine mixtures: Gradually add the dry ingredients to the pumpkin mixture, mixing on low speed until just combined. Do not overmix.

            Chill the dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes to make it easier to roll out.

              Roll and cut shapes: On a lightly floured surface, roll out the chilled dough to about ¼-inch thickness. Use cookie cutters to cut out your preferred shapes and place them on a parchment-lined baking sheet.

                Bake cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                  Prepare the icing: In a small bowl, mix the powdered sugar with 2 tablespoons of milk and a pinch of cinnamon until smooth. Add more milk if necessary to reach your desired consistency.

                    Decorate cookies: Once the cookies are fully cooled, drizzle or spread the icing on top, and let it set for a few minutes before serving.
