2 cups all-purpose flour

1/2 teaspoon salt

1 large egg

1/2 cup ricotta cheese

1 cup mashed ripe plums (about 3-4 plums)

1 tablespoon sugar (adjust based on plum sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/2 cup breadcrumbs

1 tablespoon butter

Cinnamon sugar (for sprinkling)

Fresh mint leaves (for garnish)

Prepare the Plum Filling: Start by washing the plums, then cut them in half and remove the pits. Mash the peeled and pitted plums in a bowl. Stir in sugar, vanilla extract, and lemon juice to enhance the flavor. Set aside.

    Make the Dumpling Dough: In a large mixing bowl, combine the flour and salt. Make a well in the center and add the egg and ricotta cheese. Gradually mix in the flour until a soft dough forms. If too sticky, sprinkle in additional flour, one tablespoon at a time.

      Roll out the Dough: Lightly flour your work surface. Divide the dough into four equal portions. Roll each portion into a thin sheet, approximately 1/8 inch thick. Use a knife or a pastry cutter to cut the dough into squares, about 3x3 inches.

        Fill the Dumplings: Place a teaspoon of the plum filling in the center of each dough square. Carefully fold the dough over the filling to form triangles or rectangles, sealing the edges well by pressing with your fingers. Ensure there are no air pockets.

          Cook the Dumplings: Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water (do not overcrowd the pot) and cook for about 4-5 minutes or until they float to the surface. Remove them with a slotted spoon and let them drain.
