1 cup shelled pistachios, finely chopped

1 ½ cups all-purpose flour

½ cup granulated sugar

¼ cup brown sugar, packed

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup buttermilk

½ cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

Zest of 1 lemon

¼ cup chopped white chocolate (optional)

Extra chopped pistachios for topping

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.

    In a mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Whisk until well combined.

      In another bowl, mix together the buttermilk, melted butter, egg, vanilla extract, and lemon zest. Whisk until smooth.

        Pour the wet ingredients into the dry ingredients, mixing gently until just incorporated. Do not overmix.

          Fold in the finely chopped pistachios and white chocolate, if using.

            Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. Sprinkle a few extra chopped pistachios on top of each muffin.

              Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.

                Once baked, allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

                  Serve warm or at room temperature, and enjoy your delightful pistachio muffins!
