Ingredients
  

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

Extra butter or oil for cooking

Instructions
 

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until well mixed.

    In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until fully combined.

      Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay. Let the batter rest for about 10 minutes.

        Heat a non-stick skillet or frying pan over medium heat and add a little extra butter or oil to coat the surface.

          Once the skillet is hot, drop spoonfuls (about 2 tablespoons) of batter onto the pan. Cook until bubbles form on the surface of the pikelet and the edges look slightly set, about 2-3 minutes.

            Flip the pikelets and cook for another 1-2 minutes or until golden brown.

              Repeat with the remaining batter, adding more butter or oil as needed.

                Serve warm with your choice of toppings like maple syrup, fresh fruit, or whipped cream.
