Ingredients
  

1 lb beef sirloin, thinly sliced

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 bell peppers (1 green, 1 red), sliced

4 cups beef broth

1 cup mushrooms, sliced

2 tablespoons Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup shredded provolone cheese

1 tablespoon cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced beef sirloin and season with salt and pepper. Sear the beef for 3-5 minutes until browned; remove it from the pot and set aside.

    In the same pot, add the diced onion and sauté for 2-3 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

      Stir in the sliced bell peppers and mushrooms, and continue to sauté for another 4-5 minutes until the vegetables have softened.

        Return the browned beef to the pot, then pour in the beef broth and add the Worcestershire sauce, dried oregano, and dried thyme. Stir to combine.

          Bring the stew to a simmer, cover the pot, and let it cook on low heat for 30-40 minutes to allow the flavors to meld together.

            If you prefer a thicker stew, mix the cornstarch with a little cold water to create a slurry and stir it into the stew. Let it simmer for an additional 5 minutes until thickened.

              Serve the stew hot, topped with a generous amount of shredded provolone cheese and garnished with chopped fresh parsley.
