Ingredients

4 large bell peppers (any color)

1 lb thinly sliced beef (ribeye or sirloin)

1 medium onion, sliced

1 cup mushrooms, sliced

2 cloves garlic, minced

1 cup provolone cheese, shredded

1/2 cup cream cheese, softened

1 tablespoon Worcestershire sauce

1 teaspoon black pepper

1/2 teaspoon salt

Fresh parsley, chopped (for garnish)

2 tablespoons olive oil

Instructions

Preheat the oven to 375°F (190°C). Prepare a baking dish by slicing the tops off the bell peppers and removing the seeds and membranes. Lightly drizzle the insides with olive oil and place them upright in the baking dish.

Cook the Beef: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the thinly sliced beef and cook until browned, about 3-5 minutes. Remove the beef from the skillet and set it aside.

Sauté Vegetables: In the same skillet, add the sliced onions and mushrooms. Sauté for about 5 minutes until they are softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Combine Ingredients: Return the cooked beef to the skillet. Add Worcestershire sauce, salt, and black pepper. Mix well to combine. Then, add the cream cheese and half of the provolone cheese, stirring until everything is melted and creamy.

Stuff Peppers: Evenly fill each prepared bell pepper with the cheesesteak mixture, packing it down slightly. Top each filled pepper with the remaining provolone cheese.

Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. After that, remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly and golden.

Garnish & Serve: Once done, remove the peppers from the oven and let them cool slightly. Garnish with chopped fresh parsley before serving.
