Ingredients

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

2 (8 oz) packages Philadelphia cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

Zest of 1 lemon

2 tablespoons lemon juice

Optional: Fresh berries or fruit sauce for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

Make the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar until well combined. Press this mixture firmly into the bottom of the prepared baking dish to form a crust.

Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in 1 cup of granulated sugar and the vanilla extract, continuing to beat until well combined.

Add Eggs: Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Add Sour Cream and Flavors: Mix in the sour cream, lemon zest, and lemon juice until smooth. This will add a refreshing zing to your cheesecake bars.

Pour and Bake: Pour the cheesecake batter over the crust in the baking dish, smoothing out the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center has a slight jiggle.

Cool Down: Once the bars are done baking, remove from the oven and let them cool at room temperature for an hour. Then, transfer to the refrigerator to chill for at least 3 hours or overnight for best results.

Serve: Cut into bars and serve chilled. If desired, top with fresh berries or a drizzle of fruit sauce for an extra touch.
