2 large cucumbers

1/4 cup unsalted roasted peanuts, roughly chopped

2 tablespoons chili oil (adjust to taste)

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 clove garlic, minced

1 teaspoon freshly grated ginger

2 green onions, finely sliced

1 tablespoon sesame seeds (optional)

Fresh coriander leaves for garnish

Salt to taste

Prepare the Cucumbers: Wash the cucumbers thoroughly. Cut them in half lengthwise, then slice them into thin half-moons. Place the cucumber slices in a colander and sprinkle with a pinch of salt. Let them sit for about 15 minutes to draw out excess moisture.

    Make the Sauce: In a mixing bowl, combine chili oil, soy sauce, rice vinegar, sesame oil, honey or maple syrup, minced garlic, and grated ginger. Whisk thoroughly until well blended. Adjust the chili oil based on your heat preference.

      Combine Ingredients: After the cucumbers have released some water, rinse them under cold water to reduce saltiness, then pat them dry with paper towels. In a large bowl, combine the cucumbers, chopped peanuts, and green onions.

        Dress the Salad: Pour the sauce over the cucumber mixture and toss gently until everything is well coated.
