Peach Honey Dijon Balsamic Vinaigrette

Ingredients
  

1 ripe peach, peeled and diced

2 tablespoons honey

1 tablespoon Dijon mustard

1/4 cup balsamic vinegar

1/3 cup extra virgin olive oil

Salt and pepper, to taste

Optional: fresh basil or mint leaves for garnish

Instructions
 

In a blender or food processor, combine the diced peach, honey, Dijon mustard, and balsamic vinegar. Blend until smooth and creamy.

    With the blender running, gradually drizzle in the olive oil until fully emulsified and the dressing is well combined.

      Season the vinaigrette with salt and pepper to taste. Adjust the sweetness or acidity by adding more honey or vinegar as desired.

        If you like, stir in finely chopped fresh basil or mint for added flavor.

          Transfer the vinaigrette to a sealed jar and refrigerate for at least 30 minutes to allow the flavors to meld.

            Shake well before serving. Use it as a dressing for salads, grilled meats, or as a dip for fresh vegetables.
