4 thick-cut pork chops (bone-in or boneless)

Salt and pepper, to taste

1 tablespoon olive oil

2 cups ripe peaches, pitted and diced

1/4 cup honey

1/4 cup balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon garlic powder

1/2 teaspoon paprika

1 tablespoon butter

Fresh thyme sprigs for garnish (optional)

Instructions
 

Prepare the Pork Chops: Season the pork chops generously with salt and pepper on both sides.

    Sear the Chops: In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side until they have a nice golden brown crust. Remove the chops from the skillet and set aside.

      Make the Peach Glaze: In the same skillet, add the diced peaches, honey, balsamic vinegar, fresh thyme, garlic powder, and paprika. Stir well and cook over medium heat for about 5-7 minutes, until the peaches soften and the mixture reduces slightly.

        Combine Chops and Glaze: Return the pork chops to the skillet, spooning the peach mixture over them. Reduce the heat to medium-low and cover. Cook for an additional 10-12 minutes, or until the pork chops are cooked through (145°F internal temperature).

          Finish with Butter: Add the butter to the skillet, swirling it in until melted and combined for a glossy finish on the glaze.

            Serve: Remove the skillet from heat and transfer the pork chops to a serving platter. Spoon the remaining peach glaze over the top and garnish with fresh thyme sprigs if desired.
