Ingredients

1 ripe papaya, peeled, seeded, and chopped

1 ripe banana, sliced

1 cup coconut milk (can use lite or full-fat)

1 tablespoon shredded coconut (unsweetened)

1 tablespoon maple syrup or agave nectar (optional, for sweetness)

1/2 teaspoon vanilla extract

1/4 teaspoon ground ginger (optional, for a spicy kick)

1 cup ice cubes

Fresh mint leaves for garnish (optional)

Instructions

Begin by preparing your fruits. Peel the papaya, remove the seeds, and chop it into small pieces. Slice the banana and set aside.

In a blender, combine the chopped papaya, banana slices, coconut milk, shredded coconut, maple syrup (if using), vanilla extract, and ground ginger.

Add the ice cubes to the blender.

Blend on high speed until you achieve a smooth and creamy consistency. If the smoothie is too thick, you can add more coconut milk to reach your desired texture.

Taste the smoothie and adjust the sweetness, adding more maple syrup if necessary.

Pour the smoothie into serving glasses and garnish with fresh mint leaves and a sprinkle of shredded coconut on top.

Serve immediately and enjoy your tropical refreshing drink!
